Sweet & Nutty Banana Bread

This bread is a moist and sweet treat that’s tailored for diabetics. Perfect for enjoying on its own or spreading with your favorite toppings, this delicious bread brings together the rich flavors of bananas and nuts while keeping it health-conscious. Ingredients:

- 3 bananas - 100 g ground walnuts - 150 g whole spelt flour - 1 tablespoon honey - 120 g Greek yogurt - 12 g baking powder - Just under ½ teaspoon salt

Instructions:

1. Preheat the oven to 170°C (338°F). 2. Cut the bananas into pieces, add honey and Greek yogurt. Blend until smooth using an immersion blender or a regular blender. 3. In a separate bowl, mix all the dry ingredients: flour, ground walnuts, baking powder, and salt. 4. Add the dry ingredients to the banana mixture and mix well. 5. Line a loaf pan with parchment paper and evenly spread the batter. 6. Bake for about 50 minutes. Check for doneness by inserting a toothpick in the center; it should come out clean.
