Light yet satisfying, they offer a crunchy texture, ideal for breakfast or a snack. Plus, they’re made with wholesome spelt flour and Greek yogurt, keeping them both nutritious and delicious!![]() - 250g (8.8 oz) whole grain spelt flour - 12g (0.4 oz) baking powder - 1 egg - 70g (2.5 oz) Greek yogurt - 50g (1.8 oz) light butter - A pinch of salt - ½ tsp cinnamon - 2-3 tbsp unsweetened oat drink or milk (as needed) - 80g (2.8 oz) chopped dried dates - 50g (1.8 oz) chopped dried apricots
Instructions: 1. Preheat the oven to 170°C (338°F). 2. Chop the dates and apricots, sprinkle them with cinnamon, and mix well. 3. In a bowl, combine the flour, baking powder, and salt. 4. Add the egg, Greek yogurt, butter, and oat drink/milk (only as much as needed to form a non-sticky dough). 5. Knead the dough until smooth. 6. Roll out the dough and evenly spread the dried fruit mixture over it. 7. Roll the dough into a log shape. Gently press the roll to seal and incorporate the fruit. 8. Cut into slices about 1 cm thick. Flatten slightly with a knife and shape into rounds with your fingers. 9. Bake for 20 minutes or until golden brown and crispy.
