Just for You - Recipe of the Month

Special Bundt Cake

This wholesome bundt cake is crafted with high-quality, natural ingredients like whole-grain spelt flour, dates, carob, and Greek yogurt. Perfectly moist and richly flavored, it’s not only a delightful treat but also diabetic-friendly. Ingredients: - 300 g (10.58 oz) whole-grain spelt flour - 220 g (7.76 oz) pitted dates - 1 tsp baking soda - 200 ml (6.8 fl oz) boiling water - 100 g (3.53 oz) ground carob - 100 ml (3.4 fl oz) orange juice - 3 eggs - 150 g (5.29 oz) Greek yogurt or 130 g (4.59 oz) melted light butter - 12 g (0.42 oz) baking powder - 1 tsp bourbon vanilla - 50-100 g (1.76-3.53 oz) melted dark chocolate for decoration (optional)

Note: If you use butter, the cake will be slightly moister due to its higher fat content. However, the version with Greek yogurt is nutritionally better.



Instructions: 1. Combine the dates and baking soda in a bowl, pour over boiling water, and let cool. 2. Blend the mixture until smooth using a blender or immersion blender. 3. In a separate bowl, mix flour, baking powder, and carob. 4. Beat the eggs until fluffy, then add Greek yogurt (or melted light butter), vanilla, and orange juice. Mix well. 5. Incorporate the date mixture and gradually add the dry ingredients (sift them for best results). Stir until the batter is smooth and uniform. 6. Grease a large bundt cake pan with oil and dust it lightly with flour. 7. Pour the batter evenly into the prepared bundt pan. 8. Bake for about 35 minutes, or until a skewer inserted into the cake comes out slightly moist but clean. 9. Allow the cake to cool briefly, then immerse the pan in cold water to help release the cake. 10. (Optional) Melt the dark chocolate over low heat and drizzle it over the cake before serving.
