Carob and Fruit Cake

Ingredients:

  • 2 eggs
  • 100 g rolled oats
  • 100 g carob powder
  • 2 apples
  • 2 pears
  • 2 tablespoons fig or apricot jam (no added sugar)
  • 1 teaspoon baking soda
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon bourbon vanilla
  • 200 ml whey
  • Stevia to taste


Instructions:

  1. Preheat the oven to 180°C / 356°F.
  2. Line a small round baking pan with parchment paper.
  3. Grind the rolled oats into a flour-like texture.
  4. Wash, peel, and thinly slice the apples and pears.
  5. In a mixing bowl, beat the eggs until frothy.
  6. Add the ground oats, carob powder, baking soda, cocoa powder, vanilla, jam, and whey. Mix well.
  7. Fold in the sliced fruit and stir until evenly combined.
  8. Taste the batter and, depending on the sweetness of the fruit, add stevia to taste.
  9. Pour the mixture evenly into the prepared pan.
  10. Bake for 25 minutes.
  11. Let the cake cool completely before removing it from the pan.
