Wholesome Strawberry Muffins

🧁 Ingredients

  • 2 eggs
  • 200 ml (6.8 fl oz) whey
  • 100 g (3.5 oz) Greek yogurt
  • 3 tbsp maple syrup
  • 2 tbsp agave syrup
  • 250 g (8.8 oz) whole grain spelt flour
  • Pinch of salt
  • 10 g (about 2 tsp) baking powder
  • Stevia to taste (optional)
  • About 50 g (1.75 oz) chopped walnuts
  • About 150 g (5.3 oz) sliced strawberries


👩‍🍳 Instructions

  1. Preheat your oven to 180°C (356°F).
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, beat the eggs until fluffy.
  4. Add maple syrup, agave syrup, Greek yogurt, whey, and the flour mixture to the eggs. Stir until well combined.
  5. Add stevia to taste if you'd like them sweeter, and mix again.
  6. Line a muffin tin with paper liners.
  7. Fill each liner nearly to the top with the batter using a spoon.
  8. Top each muffin with chopped strawberries and walnuts.
  9. Bake for about 25 minutes. Check doneness with a toothpick—it should come out just slightly moist but without raw batter.
