Oat & Berry Morning Cake

Ingredients

  • 1 cup almond flour
  • 1 cup rolled oats
  • 1 cup unsweetened almond milk
  • 50 g (1.8 oz) dark chocolate
  • 3 eggs
  • 3 tbsp maple syrup
  • 3 tbsp agave syrup
  • 2 small apples
  • About 150 g (5.3 oz) mixed forest berries (fresh or frozen)
  • 1 packet (10–12 g) baking powder
  • ½ tsp cinnamon


Instructions

  1. Preheat the oven to 180⁰C / 356⁰F.
  2. Wash, peel, and coarsely grate the apples.
  3. Grind the chocolate together with the oats.
  4. In a bowl, combine all dry ingredients: almond flour, ground oats and chocolate, baking powder.
  5. Beat the eggs until fluffy.
  6. Add the grated apples, almond milk, maple syrup, agave syrup, and dry ingredients. Mix everything well by hand.
  7. Lightly grease a medium baking tin and spread the batter evenly.
  8. Mix the berries with cinnamon and sprinkle them evenly over the top.
  9. Bake for about 35 minutes, or until a toothpick inserted into the center comes out just slightly moist but without raw batter.
