Coffe and Carob Cake

Ingredients:

  • ⅔ cup milk or unsweetened almond milk 
  • 1 cup almond flour 
  • 1 cup carob powder 
  • ½ cup decaffeinated coffee 
  • 2 tablespoons maple syrup 
  • 2 tablespoons agave syrup 
  • 4 eggs 
  • 1 teaspoon baking powder 
  • Stevia to taste


Instructions:

  1. Preheat the oven to 180°C (356°F). 
  2. Line a medium-sized baking dish with parchment paper. 
  3. Mix the dry ingredients: almond flour, carob powder, and baking powder. 
  4. In a separate bowl, whisk the eggs until frothy. 
  5. Add the coffee, maple syrup, agave syrup, and dry ingredients. Mix everything thoroughly until smooth. 
  6. Finally, stir in stevia to your preferred sweetness. 
  7. Pour the batter into the prepared baking dish and smooth the surface. 
  8. Bake for about 20 minutes. Check doneness by inserting a toothpick into the center — it should come out dry when the cake is ready. 
  9. Heat the milk or almond milk  until boiling and pour over the still-warm cake for added moistness and flavor.
