Cashew Brownies

Ingredients:

  • 200 g (7 oz) dark chocolate
  • 100 g (3.5 oz) Greek yogurt
  • 90 g (3.2 oz) light butter
  • 4 eggs
  • 100 g (3.5 oz) almond flour
  • 150 g (5.3 oz) cashew nuts
  • 110 g (3.9 oz) pitted dates
  • 1 tsp baking soda

Instructions:

  1. Preheat the oven to 180°C (356°F).
  2. Finely grind the dark chocolate, cashews, and dates together in a food processor.
  3. Melt the butter over low heat.
  4. Line a medium-sized baking pan with parchment paper.
  5. Beat the eggs until light and frothy.
  6. Add the almond flour, ground chocolate-cashew-date mixture, Greek yogurt, melted butter, and baking soda to the eggs. Mix everything thoroughly until well combined.
  7. Pour the batter into the prepared pan and bake for about 25 minutes.
  8. Check doneness with a toothpick — it should come out slightly moist from the center when the brownies are done.
