Marble Cake


Ingredients:

  • 340 g (12 oz) whole grain spelt flour
  • 100 g (3.53 oz) light butter (about 40% fat)
  • 200 g (7.05 oz) firm cultured milk (3.2% fat)
  • 4 eggs
  • Purée from 2 sweet apples
  • 2 tablespoons maple syrup (or 3 tablespoons agave syrup)
  • 10 g (0.35 oz) baking powder
  • A pinch of salt
  • Grated lemon zest
  • 2 tablespoons unsweetened cocoa powder
  • Stevia to taste


Instructions

  1. Preheat the oven to 180°C (356°F).
  2. Wash, peel, and blend the apples together with the maple syrup using a hand blender or regular blender until smooth.
  3. In a separate bowl, mix the flour, salt, and baking powder.
  4. Using a mixer, beat the butter, cultured milk, and lemon zest until creamy and well combined.
  5. Add the eggs one at a time, beating well after each addition to fully incorporate.
  6. Gradually add the dry ingredients mixture and the apple purée to the wet ingredients, mixing until smooth.
  7. Add stevia to taste and mix well.
  8. Separate about one-third of the batter and stir in the cocoa powder.
  9. Grease and flour a Bundt cake pan.
  10. Pour in the light batter first, then add the cocoa batter. Swirl gently with a spoon to create a marbled effect.
  11. Bake for about 45–50 minutes. Check for doneness by inserting a skewer into the cake — it should come out clean.
